  • Description: The brewing industry today is undergoing a process of diversification and broadening of the offer, as witnessed by the appearance of micro-breweries. These are generally small and medium-sized businesses engaged in brewing and , in most cases, in direct selling of the beer (Brewpubs). This economic activity is of particular interest but is faced with a lack of professional expertise in the field. These professionals must develop mostly technological skills, related to the transformation of raw materials, as well as economic-managerial skills to ensure an effective management of the production process. A similar context characterises Slovenia. In this case too the professional figure must possess a specific training and familiarity with brewing techniques and methods. He/she must also possess a solid knowledge of the organisational, economic and strategic aspects of microbrewery management. Specifically this professional is expected to be able to perform quality checks on both the raw material and the final product. The assessment of a few chemical-physical parameters provides useful information on the characteristics of the raw material and the resulting beer obtained through set production standards.
